A cuban with swiss cheese, slow cooked pork, marinated with our house Mojo sauce, house made pickles and lusty monk mustard.

DRUNKEN CHICKEN TACOS

Slow smoked chicken in beer Topped with pickled jalapenos and sour cream.

FRIED GREEN TOMATO BLT w/ goat cheese

Fried green tomatoes, thick cut bacon, goat cheese with arugula, and red pepper aioli.

Hand breaded chicken, slaw, pickle on brioche w/ a spicy aioli.

Slow smoked pork tacos with chopped slaw, red onion and cilantro Aioli on a corn tortilla.

About Us


Mrs Ashley is a local native to Waynesville, North Carolina. Her love for food and cooking came about when she was just a wee one. From rummaging through her momma's kitchen and whipping up whatever she could get her hands on to, and from there working in a few small cafes, her passion for cooking grew stronger.

While vacationing with her husband Ben and daughter Lilly, they ate at a favorite food truck of theirs and the inspiration began. With dreams of opening up a small cafe, and having her daughter Lilly she knew she wanted to start sooner rather then later and with the help of a friend she found the big white truck and fell in love instantly.

So the work began. Writing up the menu was tricky, she knew she wanted to incorporate the concept of " Farm to Table" but for her it would be "Farm to Truck". Growing up in a small community she wanted to be able to support the local farmers and to serve the freshest ingredients. Homemade was always a word used in her household and that too was to be incorporated in this menu. So anything you find desirable you can guarantee it was grown here in Western North Carolina or made right here in the Belly Food Truck.

The truck was and has been a working progress. Through all the hardwork Mrs Ashleys dreams are coming true.
